Ingredients

The stir fry

  • 6-9 oz cooked noodles
  • 1 to 1 ½ pounds raw shrimp (peeled and deveined)
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • to taste salt and pepper
  • 1 teaspoon olive oil
  • 3 cups fresh or frozen mixed vegetables
  • 3 cloves garlic (minced)
  • 1-2 teaspoons fresh minced ginger

The stir fry sauce

  • ½ cup soy sauce or liquid aminos
  • 2 tablespoons rice vinegar
  • ¼ cup brown sugar or sweetener
  • ½ tablespoon cornstarch
  • ½ tablespoon cold water

Instructions

  1. Season the shrimp with smoked paprika, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and add the shrimp, cooking until bright pink.
  3. Remove the shrimp and set aside.
  4. In the same pan, add more olive oil if needed, then add vegetables, garlic, and ginger, cooking until soft.
  5. Remove the vegetables and set aside.
  6. Add soy sauce, rice vinegar, and brown sugar to the pan, stirring until dissolved.
  7. Mix cornstarch and cold water in a bowl until smooth, then add to the sauce, stirring until thickened.
  8. Add the cooked shrimp, vegetables, and noodles to the pan, stirring to combine and heat through.
