Burrito Millet Grain Bowl

The sauces

Instructions
- Bring water to a boil and add millet, then reduce heat and simmer until tender.
- Drain any remaining water from the millet and fluff with a fork.
- While millet is cooking, prepare toppings and sauces.
- Heat refried beans and set aside.
- In large bowls, layer cooked millet, refried beans, lettuce, corn, cherry tomatoes, cucumber, avocado, shredded carrots, cilantro, green onion, pumpkin seeds, lemon or lime slices, salsa, and optional vegan sour cream.
- Serve immediately or store for meal prep.
