Burrito Millet Grain Bowl

Ingredients

The grain

  • 1 cup millet, uncooked
  • 2 cups water

The toppings

  • 1 15-ounce can vegetarian refried beans
  • 2 cups chopped lettuce
  • 1 cup frozen corn, thawed
  • 1 cup cherry tomatoes, cut in half
  • 2 small Armenian cucumbers, sliced
  • 1 large avocado, sliced
  • 1 cup shredded carrots
  • ½ cup chopped fresh cilantro
  • 2 stalks green onions, sliced
  • 2 tablespoons pumpkin seeds, shelled
  • 1 whole lemon or lime, sliced

The sauces

  • ½ cup prepared salsa
  • ½ cup vegan sour cream, optional

Instructions

  1. Bring water to a boil and add millet, then reduce heat and simmer until tender.
  2. Drain any remaining water from the millet and fluff with a fork.
  3. While millet is cooking, prepare toppings and sauces.
  4. Heat refried beans and set aside.
  5. In large bowls, layer cooked millet, refried beans, lettuce, corn, cherry tomatoes, cucumber, avocado, shredded carrots, cilantro, green onion, pumpkin seeds, lemon or lime slices, salsa, and optional vegan sour cream.
  6. Serve immediately or store for meal prep.
