Bacon Wrapped Shrimp

Ingredients

The shrimp

  • 1 pound jumbo shrimp, peeled and deveined, tails intact

The bacon

  • 12 slices bacon, halved

The marinade

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon fresh thyme, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For garnish

  • to taste fresh parsley
  • to taste lemon wedges

Instructions

  1. Preheat the broiler and line a baking sheet with foil.
  2. Soak toothpicks in water for at least 30 minutes.
  3. Microwave half the bacon on a plate lined with paper towels until mostly cooked, about 3 to 4 minutes.
  4. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, thyme, salt, and pepper.
  5. Toss the shrimp in the marinade to coat.
  6. Wrap each shrimp with a piece of bacon and secure with a toothpick.
  7. Broil the shrimp, flipping once, until the bacon is crispy and shrimp are cooked, about 5 minutes.
  8. Garnish with parsley and lemon wedges before serving.
