Bacon Wrapped Shrimp

Ingredients

The shrimp

  • 1 lb Extra large shrimp (26-30 shrimp; peeled and deveined, tails on)

The marinade

  • 5 tbsp Unsalted butter (melted)
  • 3 tbsp Honey (regular or sugar-free honey)
  • 1 tsp Chili powder
  • ½ tsp Garlic powder
  • ¼ tsp Sea salt

The bacon

  • 15 slices Bacon (or enough for one slice per 2 shrimp)

Miscellaneous

  • as needed Toothpicks

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Pat the shrimp dry and set aside.
  3. In a bowl, whisk together melted butter, honey, chili powder, garlic powder, and salt. Reserve ¼ cup of the marinade.
  4. Add shrimp to the marinade and toss to coat. Let marinate while cooking the bacon.
  5. Arrange bacon on a rack over a baking sheet and bake for 10-12 minutes until pliable.
  6. Set the oven to Broil (500°F/260°C).
  7. Wrap each shrimp with a halved slice of bacon, secure with a toothpick, and place on the rack.
  8. Broil for 8-10 minutes until shrimp is cooked and bacon is crispy.
  9. Brush with reserved marinade and serve.
