Ingredients

Main Ingredients

  • 1 cup Elderberries, dried organic or non irradiated
  • 4 cups Filtered Water
  • 2 inches Ginger, chopped, fresh
  • 1 piece Peel of Lemon
  • 2 sticks Cinnamon, organic

Optional Ingredients

  • 8-12 pieces Cloves, whole
  • 2 Tbsp Rose Hips, dried

Post-Cooking Ingredients

  • ¾ - 1 cup Raw Honey
  • 1 piece Juice of Lemon

Instructions

  1. Add all ingredients except the honey and lemon juice to the pressure cooker.
  2. Seal the lid and set the steam release knob to the Sealing position.
  3. Select the Pressure Cook setting for 15 minutes and allow for natural pressure release.
  4. Open the lid and strain the liquid into a bowl to cool.
  5. Optionally, simmer the syrup on low heat to reduce for thickness.
  6. Once cool, whisk in the honey and lemon juice.
  7. Taste and adjust sweetness or tartness as desired.
  8. Transfer the syrup to a bottle or jar and refrigerate.
