Elderberry Syrup, divided

Gelatin (or 4 Knox packets, or 4 Tbsp)

Hot Water (not boiling)
Instructions
- Combine elderberries, water, cinnamon stick, ginger, and cloves in a saucepan and boil, then simmer for 30-45 minutes.
- Strain the mixture into a bowl and let it cool to warm or room temperature.
- Add lemon juice and honey to the cooled syrup and whisk until combined.
- Reserve one cup of the syrup for the gummies and store the rest in the refrigerator.
- Prepare gummy molds on a baking sheet.
- In a bowl, mix ¼ cup of cooled elderberry syrup with gelatin until dissolved.
- Add hot water to the mixture and stir until dissolved, then mix in the remaining elderberry syrup.
- Pour the mixture into the molds and refrigerate for about 1 hour until firm.
- Remove gummies from molds and store in an airtight container in the refrigerator.
