Ingredients

  • ½ cup dried elderberries
  • 2 cups water
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 1 inch fresh ginger, thinly sliced
  • ½ cup honey

Instructions

  1. Combine the elderberries, water, cinnamon, cloves, and ginger in a saucepan and bring to a boil.
  2. Lower the heat and simmer until the liquid is reduced by half, about 25 to 30 minutes.
  3. Strain the mixture through a fine mesh strainer into a bowl, pressing the berries to extract as much juice as possible.
  4. Allow the juice to cool to room temperature, then stir in the honey until well combined.
  5. Transfer the syrup to a sealed glass jar and store it in the refrigerator for up to 4 weeks.
