Instructions
- Combine the elderberries, water, cinnamon, cloves, and ginger in a saucepan and bring to a boil.
- Lower the heat and simmer until the liquid is reduced by half, about 25 to 30 minutes.
- Strain the mixture through a fine mesh strainer into a bowl, pressing the berries to extract as much juice as possible.
- Allow the juice to cool to room temperature, then stir in the honey until well combined.
- Transfer the syrup to a sealed glass jar and store it in the refrigerator for up to 4 weeks.
