Ingredients

  • 2 cups King Arthur Flour Almond Flour
  • 1 cup tapioca starch
  • 1 Tbsp. baking powder
  • 1 tsp. baking powder
  • 2 Tbsp. flax meal
  • 6 Tbsp. water
  • 1 cup almond milk
  • 2 tsp. apple cider vinegar
  • ¼ cup maple syrup
  • 1 tsp. pure vanilla extract
  • ½ cup coconut oil, melted

Instructions

  1. Prepare flax eggs by whisking together flax meal and water in a small bowl and let it thicken.
  2. Combine almond milk and apple cider vinegar in a measuring cup and let it rest until slightly thickened.
  3. Preheat the waffle iron according to the manufacturer's instructions.
  4. In a large bowl, mix almond flour, tapioca starch, and baking powder.
  5. Add the almond milk mixture, flax eggs (or regular eggs), maple syrup, vanilla, and melted coconut oil to the dry ingredients and whisk until smooth.
  6. Pour batter into the preheated waffle iron and cook until golden brown and steam stops coming from the iron.
  7. Serve with pure maple syrup or your choice of toppings.
