Instructions
- Prepare flax eggs by whisking together flax meal and water in a small bowl and let it thicken.
- Combine almond milk and apple cider vinegar in a measuring cup and let it rest until slightly thickened.
- Preheat the waffle iron according to the manufacturer's instructions.
- In a large bowl, mix almond flour, tapioca starch, and baking powder.
- Add the almond milk mixture, flax eggs (or regular eggs), maple syrup, vanilla, and melted coconut oil to the dry ingredients and whisk until smooth.
- Pour batter into the preheated waffle iron and cook until golden brown and steam stops coming from the iron.
- Serve with pure maple syrup or your choice of toppings.
