Ingredients

The meat

  • 10 pieces goat loin chops

The seasoning

  • 4 tablespoons Tabil seasoning or your favorite dry rub
  • to taste none kosher salt
  • to taste none freshly ground black pepper

Instructions

  1. Dry off the goat loin chops with paper towels and season liberally with Tabil, salt, and pepper.
  2. Vacuum seal the chops.
  3. Drop the meat into the SousVide Supreme set at 130°F and leave them in there for a minimum of 2 hours.
  4. Once the 2 hours have passed, take the goat out of the packets and dry them off.
  5. Sear them with your kitchen torch and enjoy!
