Ingredients

The pork chops

  • 4 pieces medium bone-in pork chops

The seasoning

  • to taste salt
  • to taste pepper
  • 2-4 sprigs fresh herbs (thyme, sage, rosemary, etc.)
  • 1 clove garlic (peeled, smashed)

The cooking fat

  • 1 tablespoon olive oil
  • 2 tablespoons butter

Instructions

  1. Fill a large pot with water and set the sous vide immersion circulator to 140°F.
  2. Season each pork chop generously with salt and pepper on both sides.
  3. Place the seasoned pork chops in a food-safe bag along with the herbs, garlic, and olive oil, then seal the bag using a vacuum sealer or the water displacement method.
  4. Once the water bath is ready, submerge the sealed bag in the water and cook for 1 hour.
  5. Near the end of the cooking time, heat a large skillet over medium-high heat and melt the butter.
  6. Remove the pork chops from the bag and sear them in the skillet for 2-3 minutes on each side until golden brown.
  7. Serve the pork chops immediately with your choice of sides.
