Instructions
- Set the sous vide machine to 60C/140F.
- Season the pork chops with salt, pepper, and garlic powder.
- Place the pork chops in a vacuum bag with the sliced shallot and rosemary, then seal the bag.
- Submerge the bag in the water bath and cook for 1 hour.
- Remove the pork chops from the bag and discard the aromatics.
- Heat butter in a skillet over high heat, then sear the pork chops on both sides for about 2 minutes until a crust forms.
