Ingredients

The pork chops

  • 4 pieces boneless pork chops

The seasoning

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder

The aromatics

  • 1 large shallot, thinly sliced
  • 2 sprigs rosemary

The fat

  • 2 tablespoons butter

Instructions

  1. Set the sous vide machine to 60C/140F.
  2. Season the pork chops with salt, pepper, and garlic powder.
  3. Place the pork chops in a vacuum bag with the sliced shallot and rosemary, then seal the bag.
  4. Submerge the bag in the water bath and cook for 1 hour.
  5. Remove the pork chops from the bag and discard the aromatics.
  6. Heat butter in a skillet over high heat, then sear the pork chops on both sides for about 2 minutes until a crust forms.
