Ingredients

The cake

  • 1 cup all-purpose flour
  • 1 cup granulated sugar

  • 6 tablespoons sour cream
  • ½ cup water or coffee
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2 ounces unsweetened baking chocolate
  • 2 tablespoons unsalted butter
  • as needed cocoa powder for greasing

The frosting

  • 2 tablespoons unsalted butter
  • 2 tablespoons cocoa powder
  • 8 ounces powdered sugar
  • 3 tablespoons espresso, coffee, or cold brew

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking pan with butter and cocoa powder.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and baking powder.
  3. In another bowl, mix the sour cream, water (or coffee), egg, and vanilla extract.
  4. Melt the baking chocolate and butter together in the microwave or on the stove.
  5. Combine the melted chocolate mixture with the dry ingredients and wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and smooth it out.
  7. Bake for 32-37 minutes until the cake pulls away from the edges and is domed in the center.
  8. Let the cake cool for 5-10 minutes before transferring it to a cooling rack.
  9. Prepare the frosting by creaming together butter and cocoa powder, then gradually mix in powdered sugar and coffee until smooth.
  10. Once the cake is cool, frost it with the coffee frosting.
