Grilled Black Bean Mojo Burger

Ingredients

Mojo Sauce

  • 1 cup cilantro
  • cup orange juice
  • 2 cloves minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp cumin

Burger Mix

  • ½ can black beans (drained, half mashed, half whole)
  • 1 cup cooked quinoa
  • 1 cup cooked brown rice
  • ¼ cup diced red peppers
  • ¼ cup diced red onions
  • 1–2 tbsp bread crumbs
  • 1 large egg
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Blend all mojo ingredients until pureed and set aside.
  2. Mash half of the black beans and combine with all burger ingredients excluding bread crumbs.
  3. If the mixture is too loose, stir in bread crumbs until a burger-like consistency is achieved.
  4. Form patties and brush mojo on each side.
  5. Refrigerate patties for 30 minutes to firm up.
  6. Grill patties on aluminum foil or a cast iron skillet for about 5 minutes per side.
  7. Serve on grilled pita bread with additional mojo.
