Ingredients

The pork chops

  • 4 pieces boneless pork chops
  • 2 tablespoons olive oil

The seasoning

  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons Italian seasoning

The filling

  • 1 cup mozzarella cheese, shredded
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups spinach, chopped

Instructions

  1. Preheat the oven to 190C/375F.
  2. Cut a pocket in each pork chop by slicing horizontally into the meat.
  3. Rub olive oil over each pork chop and season with salt, pepper, and Italian seasoning.
  4. In a mixing bowl, combine parsley, cheese, sun-dried tomatoes, and spinach, then stuff this mixture into each pork chop.
  5. Heat remaining olive oil in a skillet over medium-high heat and sear the stuffed pork chops for 2-3 minutes on each side until browned.
  6. Transfer the skillet to the oven and bake for 25 minutes until fully cooked and cheese is melted.
  7. Let the stuffed pork rest for 5 minutes before serving.
