Instructions
- Preheat the oven to 190C/375F.
- Cut a pocket in each pork chop by slicing horizontally into the meat.
- Rub olive oil over each pork chop and season with salt, pepper, and Italian seasoning.
- In a mixing bowl, combine parsley, cheese, sun-dried tomatoes, and spinach, then stuff this mixture into each pork chop.
- Heat remaining olive oil in a skillet over medium-high heat and sear the stuffed pork chops for 2-3 minutes on each side until browned.
- Transfer the skillet to the oven and bake for 25 minutes until fully cooked and cheese is melted.
- Let the stuffed pork rest for 5 minutes before serving.
