Stuffed Pork Chops

Ingredients

The pork chops

  • 3-4 pieces boneless pork chops

The seasonings

  • 1 teaspoon Italian seasoning
  • 2 teaspoons Creole seasoning

The stuffing

  • 2-3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1½-2 cups mushrooms, sliced
  • 1 medium red bell pepper, sliced
  • 2-3 cups baby spinach
  • 4-8 slices Provolone or smoked Gouda cheese

Instructions

  1. Preheat the oven to 375℉ (190℃).
  2. Season both sides of the pork chops with Italian and Creole seasoning.
  3. Cut a pocket in each pork chop about ¾ of the way through and season the inside.
  4. In a skillet, heat olive oil and sauté garlic, then add mushrooms and bell pepper, cooking for a few minutes before adding spinach until wilted.
  5. Stuff the pork chops with the sautéed mixture and add cheese slices.
  6. Secure the openings of the pork chops with toothpicks.
  7. Sear the pork chops in an oven-proof skillet over medium heat for 3-4 minutes on each side.
  8. Transfer the skillet to the oven and bake for 14-16 minutes until the internal temperature reaches 145℉ (65℃).
  9. Let the pork chops rest for 5-10 minutes before serving.
