Instructions
- Preheat the oven to 375℉ (190℃).
- Season both sides of the pork chops with Italian and Creole seasoning.
- Cut a pocket in each pork chop about ¾ of the way through and season the inside.
- In a skillet, heat olive oil and sauté garlic, then add mushrooms and bell pepper, cooking for a few minutes before adding spinach until wilted.
- Stuff the pork chops with the sautéed mixture and add cheese slices.
- Secure the openings of the pork chops with toothpicks.
- Sear the pork chops in an oven-proof skillet over medium heat for 3-4 minutes on each side.
- Transfer the skillet to the oven and bake for 14-16 minutes until the internal temperature reaches 145℉ (65℃).
- Let the pork chops rest for 5-10 minutes before serving.
