Instructions
- Tenderize the pork chops to about ½-inch thick and season with salt and pepper.
- Cook the mushrooms in olive oil with salt for 15-20 minutes, then add onion, garlic, and thyme, cooking for an additional 3-4 minutes.
- Let the mushroom mixture cool, then mix in the cream cheese.
- Spread the filling onto one end of each pork chop and roll them up tightly.
- Dredge each stuffed pork chop in whisked eggs, then coat with Ritz cracker crumbs, double-dipping if desired.
- Place the pork chops in a greased casserole dish, drizzle with olive oil, and bake at 400ºF for 25-30 minutes until golden brown and cooked through.
- Let the pork chops rest for 10 minutes before serving.
