Ingredients

The pork chops

  • 1 lb boneless pork chops
  • 2 teaspoons coarse salt
  • 1 teaspoon coarsely ground black pepper
  • 1.5 tablespoons olive oil

The filling

  • 8 oz Bella mushrooms, sliced
  • 8 oz white mushrooms, sliced
  • ½ small white onion, minced
  • 4 cloves garlic, minced
  • 1 tablespoon minced fresh thyme
  • 4 oz cream cheese, room temperature

The topping

  • 2 large eggs
  • 1 cup Ritz cracker crumbs
  • 4 teaspoons pork rub

Instructions

  1. Tenderize the pork chops to about ½-inch thick and season with salt and pepper.
  2. Cook the mushrooms in olive oil with salt for 15-20 minutes, then add onion, garlic, and thyme, cooking for an additional 3-4 minutes.
  3. Let the mushroom mixture cool, then mix in the cream cheese.
  4. Spread the filling onto one end of each pork chop and roll them up tightly.
  5. Dredge each stuffed pork chop in whisked eggs, then coat with Ritz cracker crumbs, double-dipping if desired.
  6. Place the pork chops in a greased casserole dish, drizzle with olive oil, and bake at 400ºF for 25-30 minutes until golden brown and cooked through.
  7. Let the pork chops rest for 10 minutes before serving.
