Ingredients

The pork chops

  • 4 pieces boneless pork chops

The filling

  • ½ cup oil packed sun dried tomato halves
  • ½ cup fresh spinach leaves
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 tablespoon parsley, chopped

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Slice a deep pocket into each pork chop, being careful not to cut all the way through.
  3. Fill each pocket with sun dried tomatoes, spinach leaves, and 2 tablespoons of cheese.
  4. Seal the pork chops with toothpicks to keep the filling inside.
  5. Season both sides of each pork chop with Italian seasoning, salt, and pepper.
  6. Heat olive oil in a large pan over medium-high heat and cook the pork chops for 3-4 minutes on each side until golden brown.
  7. Transfer the pan to the oven and bake for 8-10 minutes until the internal temperature reaches 145 degrees F.
  8. Let the pork stand for 3 minutes before serving, then sprinkle with parsley.
