Ingredients

  • 15 oz pumpkin puree
  • ¾ cup coconut flour
  • ¾ cup maple syrup
  • teaspoons ground cinnamon
  • ¾ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • as needed butter or coconut oil (for greasing the pan)

Instructions

  1. Preheat the oven to 350°F and grease a 9"x9" baking dish with butter or coconut oil.
  2. Combine all ingredients in a large mixing bowl and stir until no clumps remain.
  3. Transfer the batter to the greased baking dish and smooth the top with a spatula.
  4. Bake for 40-45 minutes, until the edges are golden and the center is firm.
  5. Allow to cool completely, then cut into squares and serve.
