Ingredients

  • ¾ cup coconut flour
  • ½ cup pumpkin puree
  • ¾ cup maple syrup
  • 6 pieces eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¾ teaspoon baking soda
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with 12 baking cups.
  2. In a mixing bowl, combine all the ingredients and mix well to eliminate clumps.
  3. Divide the batter into the prepared muffin cups.
  4. Bake for 25 to 30 minutes until the edges are golden and the centers are firm.
  5. Let the muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
