Ingredients

The nachos

  • 8 ounces tortilla chips
  • 2 tablespoons avocado oil
  • 1 small yellow onion, chopped
  • 1 whole jalapeno, seeded and diced
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • ½ teaspoon salt
  • ¼ cup water
  • ¼ cup salsa
  • 4 ounces shredded cheddar cheese

Optional toppings

  • to taste sour cream
  • to taste scallions
  • to taste fresh cilantro
  • to taste diced tomatoes
  • to taste pickled jalapeno
  • to taste black olives or green olives
  • to taste corn
  • to taste lettuce
  • to taste avocado
  • to taste guacamole
  • to taste pickled red onion
  • to taste black beans
  • to taste queso or nacho cheese sauce
  • to taste avocado cream
  • to taste lime juice and lime wedges
  • to taste refried beans
  • to taste hot sauce

Instructions

  1. 1. Preheat the Blackstone griddle to medium heat and add oil.
  2. 2. Sauté onion and jalapeño on the griddle for 3 minutes.
  3. 3. Add ground beef, breaking it apart, and cook until browned, about 5 minutes.
  4. 4. Season the beef with taco seasoning and salt, then add a squirt of water and stir.
  5. 5. Mix in salsa and cook for an additional 3 minutes.
  6. 6. Arrange a single layer of tortilla chips on a parchment-lined baking sheet.
  7. 7. Transfer the beef mixture onto the chips and sprinkle cheese on top.
  8. 8. Place the baking sheet on the griddle, cover, and cook until the cheese melts.
  9. 9. Add your desired toppings and serve immediately.
