Instructions
- Prepare the shrimp by peeling and deveining it, and juice the lemon.
- Chop the garlic and parsley, halve the tomatoes, slice the scallions, and crumble the bacon.
- Spiralize the zucchini.
- In a large sauté pan, melt 2 tablespoons of butter over medium heat and sauté the garlic until softened.
- Add the shrimp and cook until pink, then add red pepper flakes.
- Once the shrimp is nearly cooked, add lemon juice and wine, cooking briefly to reduce.
- Remove the shrimp mixture from the pan and keep warm.
- In the same pan, melt 2 more tablespoons of butter and sauté the zucchini until crisp-tender.
- Add Parmesan cheese to the zucchini and toss.
- Combine the shrimp, sauce, bacon, and tomatoes with the zucchini and serve.
