Ingredients

Shrimp Scampi

  • 1 pound shrimp, shelled
  • 2 tablespoons salted butter
  • 3 cloves garlic, chopped
  • ¼ cup lemon juice
  • ¼ cup dry white wine or chicken broth
  • ¼ teaspoon red pepper flakes
  • 2 scallions sliced
  • ¼ cup parsley, chopped
  • 2 tablespoons salted butter

Zucchini Noodles

  • 1 ½ pounds zucchini, spiralized
  • 2 tablespoons salted butter

Toss With the Rest

  • ½ cup grated Parmesan cheese
  • 4 slices bacon, crumbled
  • 6 ounces cherry tomatoes, halved

Instructions

  1. Prepare the shrimp by peeling and deveining it, and juice the lemon.
  2. Chop the garlic and parsley, halve the tomatoes, slice the scallions, and crumble the bacon.
  3. Spiralize the zucchini.
  4. In a large sauté pan, melt 2 tablespoons of butter over medium heat and sauté the garlic until softened.
  5. Add the shrimp and cook until pink, then add red pepper flakes.
  6. Once the shrimp is nearly cooked, add lemon juice and wine, cooking briefly to reduce.
  7. Remove the shrimp mixture from the pan and keep warm.
  8. In the same pan, melt 2 more tablespoons of butter and sauté the zucchini until crisp-tender.
  9. Add Parmesan cheese to the zucchini and toss.
  10. Combine the shrimp, sauce, bacon, and tomatoes with the zucchini and serve.
