Shrimp Scampi with Zucchini Noodles

Ingredients

The shrimp and sauce

  • 4 tablespoons olive oil
  • lbs. shrimp, peeled & deveined
  • ½ cup onions, diced
  • 2 cloves garlic, minced
  • cup white wine
  • 1 teaspoon red pepper flakes
  • 1 pint cherry tomatoes
  • 2 tablespoons butter
  • to taste salt & pepper
  • juice of 1 lemon
  • cup fresh basil, chopped

The zucchini noodles

  • 3 zucchini, made into noodles

Instructions

  1. Heat a skillet over medium-high heat and add 2 tablespoons of olive oil and the shrimp, seasoning with red pepper flakes, salt, and pepper.
  2. Sauté the shrimp for 2-3 minutes on each side until they turn opaque, then remove from the pan.
  3. In the same skillet, add onions and sauté for 3-4 minutes until translucent.
  4. Add garlic and sauté for 30 seconds, then deglaze with white wine, scraping the bottom of the pan.
  5. Add cherry tomatoes, cover, and sauté for 3-4 minutes until they soften.
  6. Return the shrimp to the pan along with butter, lemon juice, remaining red pepper flakes, and basil, stirring until the butter melts.
  7. In another skillet, heat 2 tablespoons of olive oil and sauté the zucchini noodles for 2-3 minutes before removing.
  8. Combine the zucchini noodles with the shrimp mixture, toss to coat, and serve.
