Instructions
- Prep the shrimp by peeling and deveining them, and prepare the other ingredients.
- In a large sauté pan, melt 2 tablespoons of butter over medium heat and sauté the garlic until softened.
- Add the shrimp and cook until they turn pink, then add red pepper flakes, lemon juice, and wine, cooking briefly to reduce the liquid.
- Stir in the remaining butter, parsley, and scallions, then keep warm.
- In the same pan, sauté the zucchini noodles in 2 tablespoons of butter until crisp-tender, seasoning with salt and pepper.
- Combine the zucchini with Parmesan cheese, then add the shrimp mixture, bacon, and tomatoes, tossing everything together.
- Serve with lemon wedges and additional cheese if desired.
