Cranberry-Orange Snow Scones

Ingredients

  • 1 cup fresh cranberries
  • 2 3/8 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ cup sugar
  • 1 teaspoon salt
  • 1 teaspoon grated orange zest (optional)
  • ½ cup plus 1 tablespoon cold, unsalted butter
  • 1 cup buttermilk
  • 1 ½ tablespoons melted butter
  • to taste sugar for sprinkling (pearl sugar or turbinado sugar)

Instructions

  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. Pulse cranberries in a food processor until coarsely chopped.
  3. Whisk together flour, baking powder, baking soda, sugar, salt, and orange zest.
  4. Cut cold butter into cubes and mix into dry ingredients until pea-sized lumps form.
  5. Add buttermilk and cranberries, mixing gently until the dough holds together.
  6. Turn the dough onto a floured surface and pat into a rectangle about 1½ inches thick.
  7. Cut the dough into circles or triangles and transfer to the prepared baking sheet.
  8. Brush the tops with melted butter and sprinkle with sugar.
  9. Bake for about 20 minutes until lightly browned, then let cool briefly before serving.
