Instructions
- Cook the rice using a rice cooker or pot.
- Chop the tomatoes and onions for the salsa, mix with lemon juice, salt, and pepper.
- Mix taco seasoning ingredients and store in an airtight container.
- Combine ketchup, 1 tablespoon of taco seasoning, and ½ cup of water in a bowl.
- Heat olive oil in a frying pan, add onion, and cook until soft.
- Add ground beef to the pan and cook until browned.
- Stir in the taco seasoning mixture and simmer until thickened.
- Assemble the dish by placing rice in a bowl, topping with beef, lettuce, avocado, salsa, and cheese.
