Okinawa Taco Rice

Ingredients

The base

  • 3 cups cooked rice

The taco filling

  • 250 g ground beef
  • ½ tbs olive oil
  • ½ unit brown onion
  • 1 tbs ketchup
  • 1 tsp mild Mexican chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp corn starch

The toppings

  • 2 cups shredded iceberg lettuce
  • ½ unit avocado
  • ¼ cup shredded mozzarella cheese
  • 6 unit cherry tomatoes
  • ¼ unit purple onion
  • 1 tsp lemon juice
  • pinch unit salt and pepper

Instructions

  1. Cook the rice using a rice cooker or pot.
  2. Chop the tomatoes and onions for the salsa, mix with lemon juice, salt, and pepper.
  3. Mix taco seasoning ingredients and store in an airtight container.
  4. Combine ketchup, 1 tablespoon of taco seasoning, and ½ cup of water in a bowl.
  5. Heat olive oil in a frying pan, add onion, and cook until soft.
  6. Add ground beef to the pan and cook until browned.
  7. Stir in the taco seasoning mixture and simmer until thickened.
  8. Assemble the dish by placing rice in a bowl, topping with beef, lettuce, avocado, salsa, and cheese.
