Spelt Berry Porridge

Instructions
- Rinse the spelt berries and place them in a pot with water covering them by 2 inches. Bring to a boil, then cover and simmer for 35-45 minutes until tender.
- Drain the spelt berries and transfer them to a food processor. Add 2 tbsp of non-dairy milk and process until some berries are chopped and some remain whole.
- Return the chopped berries to the pot and add 2 cups of non-dairy milk, cinnamon, salt, mashed bananas, and optional spices. Stir and simmer for 10 minutes until thick.
- Remove from heat and stir in vanilla and maple syrup.
- Serve in bowls with desired toppings.
