Spelt Berry Porridge

Ingredients

The porridge

  • 1 cup dry spelt berries
  • 3 pieces ripe bananas
  • 2 cups non-dairy milk
  • 2 tbsp non-dairy milk
  • 2 tsp cinnamon
  • ΒΌ tsp kosher salt
  • 2 tsp pure vanilla extract
  • 2 tbsp pure maple syrup
  • 1 pinch nutmeg
  • 1 pinch ground cloves

Toppings

  • to taste raspberries
  • to taste granola
  • to taste chopped dates
  • to taste sesame seeds
  • to taste sweetener

Instructions

  1. Rinse the spelt berries and place them in a pot with water covering them by 2 inches. Bring to a boil, then cover and simmer for 35-45 minutes until tender.
  2. Drain the spelt berries and transfer them to a food processor. Add 2 tbsp of non-dairy milk and process until some berries are chopped and some remain whole.
  3. Return the chopped berries to the pot and add 2 cups of non-dairy milk, cinnamon, salt, mashed bananas, and optional spices. Stir and simmer for 10 minutes until thick.
  4. Remove from heat and stir in vanilla and maple syrup.
  5. Serve in bowls with desired toppings.
