Ingredients

The salad

  • 1.5 lbs chicken breasts
  • 2 tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper
  • 4 pcs eggs
  • 6 slices bacon
  • 3 hearts romaine lettuce
  • 1 cup cherry tomatoes
  • 1 pcs avocado
  • ½ cup feta cheese (or blue cheese)
  • ¼ cup fresh chives

The dressing

  • 2 pcs ripe avocados
  • 1 pcs lemon (juice)
  • 2 cloves garlic
  • ¼ cup avocado oil (or olive)
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup water

Instructions

  1. Cook the chicken in oil, salt, and pepper until fully cooked, either by grilling or baking.
  2. Hard-boil the eggs by boiling them for 12 minutes, then cool in cold water.
  3. Cook the bacon until crispy.
  4. Blend all dressing ingredients in a food processor until smooth, adjusting water for consistency.
  5. Chop the lettuce, chicken, tomatoes, eggs, avocado, and bacon, then assemble the salad.
  6. Top with cheese and chives, then toss with dressing before serving.
