Ingredients

The tarts

  • 2 pieces refrigerated pie crusts
  • 1 recipe Perfect Apple Pie Filling with Cinnamon and Cognac

The oatmeal crumble topping

  • ¾ cup all-purpose flour
  • ½ cup old-fashioned oatmeal
  • ½ cup dark brown sugar
  • ½ teaspoon ground cinnamon
  • 6 tablespoons butter (melted but not hot)

For the Perfect Apple Pie Filling

  • ¾ cup granulated sugar
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 pounds crisp firm apples (such as Granny Smith)
  • 4 tablespoons butter
  • 2 tablespoons cornstarch
  • 2 tablespoons brandy
  • 1 teaspoon vanilla

Instructions

  1. Prepare the Perfect Apple Pie Filling and refrigerate it.
  2. Preheat the oven to 400°F and adjust the oven rack to the lower-middle position.
  3. Mix flour, oatmeal, sugar, and cinnamon for the crumble topping, then stir in melted butter until combined.
  4. Unroll one pie crust on a baking sheet and add half of the apple filling, leaving a border.
  5. Fold the pie crust over the filling and sprinkle some crumble topping on the exposed filling.
  6. Repeat with the second pie crust, filling, and crumble topping.
  7. Bake for 40-45 minutes until golden brown.
  8. Cool slightly and serve warm, optionally with ice cream.
