Rosemary and Sesame Paleo Crackers

Ingredients

The dry ingredients

  • 1 cup almond flour
  • ½ cup toasted sesame seeds, coarsely ground
  • ¼ cup coconut flour
  • 2 tbsp tapioca flour
  • 1 tsp Himalayan salt
  • 1 tsp onion powder
  • ½ tsp freshly ground black pepper
  • 1 tsp fresh rosemary, finely chopped
  • ½ tsp fresh thyme, finely chopped

The wet ingredients

  • 3 tbsp extra virgin olive oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 375°F.
  2. Grind the sesame seeds coarsely and transfer to a mixing bowl.
  3. Add almond flour, coconut flour, tapioca starch, onion powder, chopped herbs, salt, and pepper to the bowl and mix well.
  4. In a separate bowl, whisk the eggs and olive oil until slightly frothy.
  5. Pour the egg mixture into the dry ingredients and knead until a dough forms.
  6. Shape the dough into a thick disk and roll it out between two sheets of parchment paper to about 1/8 inch thick.
  7. Remove the top parchment sheet and cut the dough into approximately 40 crackers.
  8. Slide the parchment paper with the crackers onto a baking sheet.
  9. Bake for 12 to 14 minutes or until golden brown.
  10. Allow the crackers to cool completely before separating them.
