Lamb Kofta

Ingredients

The meatballs

  • 1 pound ground lamb
  • cup pine nuts
  • 1 tablespoon olive oil
  • ½ yellow onion peeled and roughly chopped
  • 4 cloves garlic, peeled and smashed
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground smoked paprika
  • ½ teaspoon ground coriander
  • 2 tablespoons finely minced Italian parsley
  • 1 teaspoon olive oil (for baking sheet)

For Serving

  • 1 serving cucumber and tomato salad
  • 1 serving hummus
  • 1 serving pita
  • 1 serving grilled lemons

Instructions

  1. Preheat the oven to 425°F.
  2. Toast the pine nuts in a skillet for 2-3 minutes until golden brown, then transfer to a food processor.
  3. In the same skillet, add olive oil and sauté the onion and garlic until softened, about 5 minutes.
  4. Transfer the onion and garlic to the food processor with the spices and salt, and pulse until minced.
  5. In a bowl, combine the spice mixture with the ground lamb and parsley, mixing gently.
  6. Brush a baking sheet with olive oil and scoop out meatballs, placing them 2 inches apart.
  7. Bake in the oven for about 10 minutes until golden brown and cooked through.
  8. Serve with rice, hummus, cucumber and tomato salad, and pita.
