Lamb Kofta

Instructions
- Preheat the oven to 425°F.
- Toast the pine nuts in a skillet for 2-3 minutes until golden brown, then transfer to a food processor.
- In the same skillet, add olive oil and sauté the onion and garlic until softened, about 5 minutes.
- Transfer the onion and garlic to the food processor with the spices and salt, and pulse until minced.
- In a bowl, combine the spice mixture with the ground lamb and parsley, mixing gently.
- Brush a baking sheet with olive oil and scoop out meatballs, placing them 2 inches apart.
- Bake in the oven for about 10 minutes until golden brown and cooked through.
- Serve with rice, hummus, cucumber and tomato salad, and pita.
