Grilled Lamb Kofta Wraps

Ingredients

Lamb Kofta

  • ¼ cup toasted pinenuts
  • ¼ medium red onion, rough chopped
  • 2 cloves garlic
  • ¼ cup Italian parsley, packed
  • ¼ cup fresh mint leaves, packed
  • 1 pound ground lamb
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon ground allspice
  • a generous pinch aleppo chili flakes (optional)

Wraps

  • as needed butter lettuce leaves (or baby romaine, little gems)
  • 2–3 pieces turkish cucumbers, sliced or cut into thin spears
  • a handful cherry tomatoes, halved
  • as needed Tzatziki (store-bought or homemade)
  • as needed fresh mint, sprouts for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a food processor, pulse pinenuts, onion, garlic, and herbs until coarsely ground.
  3. In a bowl, combine ground lamb with salt and spices, then add the pine nut-herb mixture and mix well.
  4. Form the mixture into sixteen 1-ounce balls or ovals.
  5. Clean and grease the grill, then place the koftas on it.
  6. Cook for 3-4 minutes, flip, then cover and cook for an additional 5 minutes or until cooked through.
  7. Assemble the wraps by placing lettuce, cucumber, tomato, and tzatziki on a platter.
  8. Top with cooked kofta, fresh mint, and sprouts.
