Grilled Lamb Kofta Wraps

butter lettuce leaves (or baby romaine, little gems)

turkish cucumbers, sliced or cut into thin spears

Tzatziki (store-bought or homemade)

fresh mint, sprouts for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a food processor, pulse pinenuts, onion, garlic, and herbs until coarsely ground.
- In a bowl, combine ground lamb with salt and spices, then add the pine nut-herb mixture and mix well.
- Form the mixture into sixteen 1-ounce balls or ovals.
- Clean and grease the grill, then place the koftas on it.
- Cook for 3-4 minutes, flip, then cover and cook for an additional 5 minutes or until cooked through.
- Assemble the wraps by placing lettuce, cucumber, tomato, and tzatziki on a platter.
- Top with cooked kofta, fresh mint, and sprouts.
