Lamb Kofta Kebab

Ingredients

The meat mixture

  • 2 lbs Ground lamb
  • ¼ cup Onion (grated)
  • 2 cloves Garlic (minced)
  • 1 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh dill (chopped)
  • 1 tsp Cumin
  • 1 ½ tsp Sea salt
  • ¼ tsp Black pepper

The skewers

  • 8 pieces Bamboo skewers

Instructions

  1. Soak bamboo skewers in water for 30 minutes.
  2. In a large bowl, mix grated onion, minced garlic, chopped herbs, cumin, salt, and pepper.
  3. Add ground lamb and mix until just combined, being careful not to over-mix.
  4. Divide the mixture into 16 sections and mold each around a skewer.
  5. Preheat the grill to medium-high heat and oil the grates.
  6. Grill the skewers for 3 minutes, flip, and cook for an additional 3-5 minutes to desired doneness.
  7. Let the kebabs rest for a few minutes before serving.
