Ingredients

The kebabs

  • 1 lb ground chicken
  • ¼ cup finely chopped onion
  • ¼ cup chopped fresh parsley
  • 2 cloves garlic
  • ¼ cup breadcrumbs
  • 1 tsp ground cumin
  • ¾ tsp ground coriander
  • ¾ tsp ground cinnamon
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp ground cayenne
  • as needed spray avocado oil

For serving (optional)

  • as needed Greek lemon rice
  • as needed hummus
  • as needed tahini sauce
  • as needed tabbouleh
  • as needed grilled vegetables
  • as needed pita bread

Instructions

  1. Soak bamboo skewers in water for at least 30 minutes if using them.
  2. In a mixing bowl, combine ground chicken, chopped onion, parsley, garlic, breadcrumbs, cumin, coriander, cinnamon, salt, and optional spices.
  3. Mix until the spices are evenly distributed.
  4. Preheat the grill to medium-high heat and lightly grease it with avocado oil.
  5. Shape about ¼ cup of the mixture into a log and press a skewer through the center, shaping it to about 5 inches long.
  6. Repeat with the remaining mixture to form approximately 8 skewers.
  7. Place the kebabs on the grill and cook for 3-4 minutes on one side, then flip and cook for another 3-4 minutes until cooked through.
  8. Ensure the internal temperature reaches 165°F (74°C).
  9. Serve hot with optional sides like lemon rice, hummus, tahini sauce, tabbouleh, grilled veggies, and pita.
