Ingredients

The Kebabs

  • 1 pound ground beef
  • 1 cup onion, finely minced
  • 1 teaspoon garlic, finely minced
  • 2 teaspoons sweet paprika or smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon fresh mint leaves, chopped
  • 4 pieces wooden or metal skewers

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cup grated peeled cucumber
  • 1 teaspoon garlic, finely minced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh mint, finely chopped
  • ¼ teaspoon salt

Instructions

  1. Whisk the spices in a small bowl to blend them together.
  2. In a large bowl, combine the ground beef, spice blend, chopped garlic, and chopped onions.
  3. Mix the ingredients thoroughly, cover with plastic wrap, and refrigerate for 30 minutes.
  4. Shape the seasoned beef into log shapes and skewer them onto wooden or metal skewers.
  5. Cook the kebabs on a hot grill pan over medium-high heat for 5-6 minutes on one side.
  6. Turn the kebabs and cook for an additional 5-6 minutes until they reach an internal temperature of 165°F.
  7. For the tzatziki sauce, whisk together Greek yogurt, cucumber, garlic, lemon juice, mint, and salt in a bowl.
  8. Refrigerate the tzatziki sauce until ready to serve.
  9. Serve the Beef Kofta Kebabs with tzatziki sauce.
