Moroccan Ground Beef Kofta Kebab

Instructions
- Combine the ground beef, onion, parsley, garlic, cumin, coriander, smoked paprika, sumac, salt, pepper, cinnamon, and oregano in a large bowl.
- Mix the ingredients thoroughly using your hands or a wooden spoon.
- Divide the mixture into 8 equal portions and shape each into a long thick sausage.
- Insert a bamboo skewer through each kofta and squeeze the meat around it.
- Refrigerate the skewered koftas for 30 minutes.
- Brush a small amount of oil onto each kofta.
- Heat a large grill pan or skillet to medium-high heat and spray with cooking oil.
- Cook the kofta kebabs for 12-14 minutes, turning occasionally until browned and cooked through.
- Check that the internal temperature reaches 145°F before removing from the grill.
- Serve the kofta over rice with cucumbers, cherry tomatoes, tzatziki, hummus, and pickled onions.
