Moroccan Ground Beef Kofta Kebab

Ingredients

  • 2 lb. ground beef
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • ¼ cup chopped fresh parsley
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon sumac
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon cinnamon
  • ½ teaspoon oregano

Instructions

  1. Combine the ground beef, onion, parsley, garlic, cumin, coriander, smoked paprika, sumac, salt, pepper, cinnamon, and oregano in a large bowl.
  2. Mix the ingredients thoroughly using your hands or a wooden spoon.
  3. Divide the mixture into 8 equal portions and shape each into a long thick sausage.
  4. Insert a bamboo skewer through each kofta and squeeze the meat around it.
  5. Refrigerate the skewered koftas for 30 minutes.
  6. Brush a small amount of oil onto each kofta.
  7. Heat a large grill pan or skillet to medium-high heat and spray with cooking oil.
  8. Cook the kofta kebabs for 12-14 minutes, turning occasionally until browned and cooked through.
  9. Check that the internal temperature reaches 145°F before removing from the grill.
  10. Serve the kofta over rice with cucumbers, cherry tomatoes, tzatziki, hummus, and pickled onions.
