Ingredients

The Kofta Kebabs

  • 1 pound Ground Beef
  • ¼ cup Onion, grated
  • ¼ cup Parsley, finely chopped
  • 2 tablespoons Fresh Mint, finely chopped
  • 2 cloves Garlic, grated or finely minced
  • 1 large Egg
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • ½ teaspoon Coriander
  • 1 pinch Cayenne Pepper
  • ½ cup Gluten-Free Breadcrumbs
  • 2 tablespoons Neutral Oil
  • 1 teaspoon Sea Salt
  • ½ teaspoon Ground Black Pepper

The Tzatziki Sauce

  • 1 ½ cups Greek Yogurt
  • 1 large English Cucumber, peeled and chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Fresh Dill, chopped
  • 1 ½ teaspoons Sea Salt

Instructions

  1. Mix all kofta ingredients in a bowl by hand.
  2. Form the mixture into kebabs around skewers.
  3. Heat oil in a cast iron skillet over medium-high heat.
  4. Cook the kebabs for about 2 minutes without touching them, then turn to brown all sides.
  5. Remove the cooked kebabs and set aside.
  6. Prepare the tzatziki sauce by mixing all ingredients in a bowl.
  7. Serve the kebabs on pita bread with tzatziki and desired garnishes.
