Kofta Kebab with Tzatziki + Pita

Ingredients

The beef kofta

  • 1 lb lean ground beef
  • 1 large yellow onion, grated
  • 3 cloves garlic, minced
  • 3 tbsp fresh mint, finely chopped
  • 3 tbsp fresh parsley, finely chopped
  • 2 ½ tsp cumin
  • 1 ½ tsp salt
  • ½ tsp pepper
  • ½ tsp cinnamon
  • ¼ cup minced pitted green olives
  • 9 short wooden skewers

The tomato salad

  • 3 medium tomatoes, chopped
  • 1 cup pitted Castelvetrano olives
  • 1 ½ tbsp olive oil
  • 1 tbsp red wine vinegar
  • to taste salt and pepper

The tzatziki

  • 2 cups Greek yogurt
  • ¼ cup fresh dill, roughly chopped
  • 3 cloves garlic, grated
  • 1 tsp salt
  • ½ tsp pepper
  • 1 juice of lemon
  • 1 medium cucumber, grated and squeezed
  • 3 tbsp olive oil

To serve

  • to taste pitas
  • to taste fresh mint
  • to taste fresh dill

Instructions

  1. Soak the wooden skewers in water while preparing the ingredients.
  2. Combine all tzatziki ingredients in a bowl and mix well, then refrigerate.
  3. In a small bowl, combine tomatoes and olives, drizzle with olive oil and red wine vinegar, season with salt and pepper, and toss.
  4. In a medium bowl, mix the beef with grated onion, mint, parsley, cumin, salt, pepper, cinnamon, and green olives until fully combined.
  5. Divide the mixture into 9 portions and mold each around the pointed ends of the skewers.
  6. Heat a grill pan over medium-high heat, spray with cooking spray or brush with olive oil, and grill the kabobs for about 8-12 minutes, turning occasionally until browned.
  7. On a serving plate, spread about 1 cup of tzatziki, arrange the kofta on top, add the tomato salad, and garnish with fresh mint and dill. Serve with pita.
