Kofta Kebab with Tzatziki + Pita

The tzatziki

Instructions
- Soak the wooden skewers in water while preparing the ingredients.
- Combine all tzatziki ingredients in a bowl and mix well, then refrigerate.
- In a small bowl, combine tomatoes and olives, drizzle with olive oil and red wine vinegar, season with salt and pepper, and toss.
- In a medium bowl, mix the beef with grated onion, mint, parsley, cumin, salt, pepper, cinnamon, and green olives until fully combined.
- Divide the mixture into 9 portions and mold each around the pointed ends of the skewers.
- Heat a grill pan over medium-high heat, spray with cooking spray or brush with olive oil, and grill the kabobs for about 8-12 minutes, turning occasionally until browned.
- On a serving plate, spread about 1 cup of tzatziki, arrange the kofta on top, add the tomato salad, and garnish with fresh mint and dill. Serve with pita.
