Ingredients

The chicken marinade

  • 1 juice of lemon
  • ¼ cup olive oil
  • 1 tbsp dried oregano
  • 3 cloves garlic
  • tsp salt
  • ½ tsp pepper
  • 2 lbs chicken breasts
  • 4-6 pieces kebab skewers

The sheet pan

  • lbs baby potatoes
  • 1 piece red pepper
  • 1 piece orange pepper
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper

For serving

  • 1 cup tzatziki
  • 1 cup crumbled feta cheese
  • 1 cup pickled red onion
  • 2 cups chopped cucumber
  • 2 cups halved baby tomatoes
  • 4 cups thinly sliced romaine lettuce
  • 4 pieces pitas

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the marinade by whisking salt, pepper, garlic, oregano, lemon juice, and olive oil in a bowl, then add chicken cubes and let marinate.
  3. Place chopped peppers and halved potatoes on the baking sheet, season with olive oil, salt, and pepper, and toss to coat.
  4. Thread marinated chicken onto skewers and place them in the center of the baking sheet with the vegetables.
  5. Bake for 25-30 minutes until the chicken is cooked through and the peppers are golden.
  6. Assemble the kebab board with cooked chicken skewers, vegetables, tzatziki, and pitas.
