Turkey Kofta Kebabs

Ingredients

  • 1 lb ground turkey
  • ¼ cup minced onion
  • 2 cloves garlic, minced
  • 1 bunch fresh herbs or parsley (basil and oregano recommended)
  • 2 tbsp almond meal
  • ¼ tsp allspice
  • ¼ tsp coriander
  • ¼ tsp smoked paprika
  • ¼ tsp chipotle powder
  • to taste sea salt
  • to taste fresh ground pepper
  • as needed Bamboo Skewers (soaked ahead of time)

Instructions

  1. Mix all ingredients together and refrigerate for at least 10 minutes.
  2. Spoon the mixture into heaping tablespoon portions and roll into oval shapes.
  3. Place two ovals onto each pre-soaked skewer.
  4. Preheat the grill to medium heat (about 350 degrees).
  5. Oil the grill grates to prevent sticking.
  6. Grill the kebabs for about 3-4 minutes on each side until char marks form and the internal temperature reaches 170 degrees.
