Ingredients

The Kofta

  • 1 pound Plainville Farm ground turkey
  • scant ⅓ cup grated onion (about ½ small onion)
  • 2 sprigs parsley, chopped
  • 2 sprigs mint leaves, chopped
  • 1 clove garlic, minced or pressed
  • 2 teaspoons kosher salt
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon allspice
  • teaspoon cayenne pepper
  • to taste extra-virgin olive oil or grape seed oil

The Yogurt Sauce

  • 1 cup non-fat Greek yogurt
  • 3 tablespoons mint leaves, chopped
  • ½ lemon juiced
  • 1 clove garlic, pressed
  • pinch kosher salt

Instructions

  1. Combine turkey, grated onion, herbs, garlic, salt, and spices in a bowl and mix gently.
  2. Shape the mixture into oval logs and refrigerate for about 30 minutes.
  3. If using wooden skewers, soak them in cold water for 15 minutes to ½ hour.
  4. Preheat the grill to medium-high heat and oil the grate.
  5. Grill the skewers for 5-6 minutes, turning occasionally for grill marks.
  6. Reduce heat and cook for another 5-8 minutes until cooked through and caramelized.
  7. Mix yogurt sauce ingredients in a bowl and refrigerate until ready to serve.
