Instructions
- Preheat the oven to 425ºF.
- Dice the zucchini and yellow squash, and slice the red onion.
- Place the chopped vegetables on a baking sheet and drizzle with olive oil, garlic powder, oregano, salt, and pepper.
- Toss the vegetables to coat them evenly and spread them out on the baking sheet.
- Roast the vegetables for 40 minutes, stirring halfway through.
- While the vegetables are roasting, prepare the meatballs by mixing ground beef, minced garlic, minced onion, parsley, oregano, cumin, cloves, cinnamon, and salt in a bowl.
- Shape the mixture into 16 meatballs.
- Heat a skillet over medium heat, add cooking oil, and cook the meatballs in batches until browned on all sides.
- Once the meatballs are cooked and the vegetables are roasted, assemble the meal by placing rice on plates, topping with roasted vegetables and meatballs, and garnishing with parsley.
