Instructions
- Rinse and drain the black-eyed peas.
- In a large bowl, mix garlic, lime juice, olive oil, cumin, crushed red pepper, and salt.
- Add black-eyed peas, corn, tomatoes, red onion, jalapeño (if using), and cilantro; mix well.
- Refrigerate for at least 20 minutes.
- Before serving, gently mix in the diced avocado.
