Black-eyed Pea Dip

Ingredients

  • 15 oz canned no salt black-eyed peas
  • 2 cloves garlic
  • 3 tbsp fresh lime juice
  • 1 tbsp extra virgin olive oil
  • 1 tsp cumin
  • a pinch crushed red pepper flakes
  • ½ tsp kosher salt
  • 1 cup cooked corn
  • 1 cup cherry tomatoes
  • ¼ cup minced red onion
  • ¼ cup cilantro
  • 1 medium avocado
  • 1 jalapeño seeded and diced (optional)

Instructions

  1. Rinse and drain the black-eyed peas.
  2. In a large bowl, mix garlic, lime juice, olive oil, cumin, crushed red pepper, and salt.
  3. Add black-eyed peas, corn, tomatoes, red onion, jalapeño (if using), and cilantro; mix well.
  4. Refrigerate for at least 20 minutes.
  5. Before serving, gently mix in the diced avocado.
