Spicy Chipotle Black Eyed Peas Hummus

Instructions
- Rinse and cool the black-eyed peas.
- Peel and chop the green onion and garlic.
- In a food processor or blender, combine the black-eyed peas, green onion, garlic, tahini, olive oil, and chipotle peppers.
- Blend until well combined.
- Add salt, pepper, lemon juice, and red wine vinegar, then blend again until creamy.
- Taste and adjust seasoning if necessary.
- Transfer to a serving bowl and garnish with extra onion and red pepper flakes.
- Store in a sealed container in the fridge for up to 7 days if not serving immediately.
