Spicy Chipotle Black Eyed Peas Hummus

Ingredients

  • 1 ⅔ cup cooked black-eyed peas
  • 1 piece green onion
  • 3 cloves garlic
  • ¼ cup tahini
  • 3 tbsp olive oil
  • 2 tbsp chipotle peppers in adobo sauce
  • 1 tbsp lemon or lime juice
  • ½ tbsp red wine vinegar
  • to taste sea salt
  • to taste pepper
  • as needed extra onion or red pepper flakes for garnish

Instructions

  1. Rinse and cool the black-eyed peas.
  2. Peel and chop the green onion and garlic.
  3. In a food processor or blender, combine the black-eyed peas, green onion, garlic, tahini, olive oil, and chipotle peppers.
  4. Blend until well combined.
  5. Add salt, pepper, lemon juice, and red wine vinegar, then blend again until creamy.
  6. Taste and adjust seasoning if necessary.
  7. Transfer to a serving bowl and garnish with extra onion and red pepper flakes.
  8. Store in a sealed container in the fridge for up to 7 days if not serving immediately.
