Instructions
- Crush and grind the cumin and coriander seeds until powdered.
- Shuck the English peas and reserve the jackets.
- Juice the jackets using a juicer, if available, and set aside.
- Blister the peas in a hot saucepan with olive oil for 1 to 2 minutes.
- In a blender, combine the crushed spices, blistered peas, garbanzo beans, lemon juice, tahini, garlic, and salt.
- Blend until chunky, then add the reserved pea juice or warm water to achieve desired consistency.
- Taste and adjust salt if necessary.
- Serve in a bowl topped with olive oil and minced parsley.
