Hummus with Green Peas

Ingredients

  • 1 15-ounce can chickpeas, drained (reserve liquid)
  • 1 cup frozen peas, thawed, drained
  • 2 cloves garlic
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon salt (optional)
  • 3 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 teaspoons extra virgin olive oil

Instructions

  1. Combine chickpeas, peas, garlic, red pepper flakes, salt, lemon juice, and tahini in a blender or food processor.
  2. Blend while gradually adding olive oil and reserved chickpea liquid until smooth.
  3. Adjust consistency with chickpea liquid as needed.
  4. Chill the hummus until ready to serve.
  5. Serve with whole wheat pita, fresh veggies, or sandwiches.
