Ingredients

The base

  • 2 cups black-eyed peas
  • 3 tablespoons tahini
  • 1 tablespoon lemon juice
  • 2-3 cloves garlic

The flavorings

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh chopped herbs
  • ½ teaspoon coarse salt
  • teaspoon cayenne pepper
  • to taste freshly ground black pepper

Instructions

  1. Bloom the herbs by combining 2 tablespoons of olive oil with fresh chopped herbs and heating in the microwave for about 30 seconds or on the stove for 1-2 minutes until aromatic.
  2. Combine the bloomed herbs and oil with the remaining ingredients in a food processor.
  3. Process until smooth, scraping down the sides as needed.
  4. Serve chilled with a swirl of olive oil and freshly ground black pepper.
