Ingredients

The cookie dough

  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract

For decorating

  • to taste royal icing or easy cookie glaze icing
  • to taste gel food coloring
  • to taste sanding sugar sprinkles
  • as needed mini marshmallows

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl.
  2. Beat the butter and sugar until smooth, then add the egg, vanilla, and almond extract.
  3. Mix in the dry ingredients until combined, adding more flour if the dough is too soft.
  4. Divide the dough in half, roll out to ¼-inch thickness, and chill for at least 1–2 hours.
  5. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  6. Cut the chilled dough into shapes using cookie cutters and bake for 11–12 minutes.
  7. Allow cookies to cool on a wire rack before decorating.
  8. Prepare the icing and decorate the cookies as desired.
