Skinny Taco Salad

The salad

Romaine lettuce, washed and roughly chopped

shredded sharp cheddar cheese (2% lowfat)

tortilla strips

black beans, rinsed and drained

whole kernel corn, drained

black olives, drained

red onion, halved and thinly sliced
The dressing

fresh cilantro, loosely packed

orange juice

lime juice

honey (optional sweetener)

Instructions
- Combine all salad ingredients in a large bowl and toss until well mixed, or arrange them in a 'rainbow-style' on top of the lettuce.
- For the dressing, blend cilantro, orange juice, lime juice, honey, cumin, salt, and pepper in a food processor or blender until combined.
- Gradually add olive oil while pulsing until the dressing is smooth.
- Drizzle the dressing over the salad and toss to combine before serving.
