Skinny Taco Salad

Ingredients

The salad

  • 1 head Romaine lettuce, washed and roughly chopped
  • 1 whole avocado, peeled, pitted and diced
  • 2 cups cherry or grape tomatoes, halved
  • 2 cups fresh cilantro leaves, loosely packed
  • 1 cup shredded sharp cheddar cheese (2% lowfat)
  • 1 cup tortilla strips
  • 1 can black beans, rinsed and drained
  • 1 can whole kernel corn, drained
  • 1 can black olives, drained
  • ½ small red onion, halved and thinly sliced

The dressing

  • 1 cup fresh cilantro, loosely packed
  • ¼ cup orange juice
  • 3 Tbsp lime juice
  • 1 Tbsp honey (optional sweetener)
  • ¼ tsp ground cumin
  • tsp salt
  • tsp freshly-ground black pepper
  • 2 Tbsp olive oil

Instructions

  1. Combine all salad ingredients in a large bowl and toss until well mixed, or arrange them in a 'rainbow-style' on top of the lettuce.
  2. For the dressing, blend cilantro, orange juice, lime juice, honey, cumin, salt, and pepper in a food processor or blender until combined.
  3. Gradually add olive oil while pulsing until the dressing is smooth.
  4. Drizzle the dressing over the salad and toss to combine before serving.
