20-minute Paleo Shrimp Scampi

Ingredients

The main ingredients

  • 1 lb shrimp, peeled
  • 3 Tbsp grass-fed butter or ghee
  • 5 large cloves garlic, minced
  • 2 shallots diced
  • ¾ cup dry white wine
  • 1 lemon juiced and zested
  • ¾ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • tsp red pepper flakes
  • ¼ cup chopped parsley
  • ½ Tbsp extra virgin olive oil

The pasta

  • to taste gluten-free pasta, spaghetti squash, zucchini noodles, or sweet potato noodles

Instructions

  1. Cook the pasta or noodles of your choice and set aside.
  2. Dry the shrimp with paper towels and season with sea salt and pepper.
  3. Melt 2 Tbsp of butter or ghee in a large skillet over high heat.
  4. Add the shrimp to the skillet and sear for about 1 minute per side until pink and opaque, then set aside.
  5. Reduce the heat to medium-low and melt 1 Tbsp of butter in the pan.
  6. Add garlic and shallots to the pan and cook for 3 minutes, stirring occasionally.
  7. Add wine, lemon juice, salt, pepper, and red pepper flakes to the skillet and bring to a boil.
  8. Let the mixture reduce for 4 to 5 minutes, stirring occasionally.
  9. Once the liquid has reduced by about half, turn off the heat and add parsley and lemon zest.
  10. Add the cooked pasta/noodles and shrimp to the pan, drizzle with olive oil, and gently toss.
  11. Serve immediately.
