20-minute Paleo Shrimp Scampi

The pasta

gluten-free pasta, spaghetti squash, zucchini noodles, or sweet potato noodles
Instructions
- Cook the pasta or noodles of your choice and set aside.
- Dry the shrimp with paper towels and season with sea salt and pepper.
- Melt 2 Tbsp of butter or ghee in a large skillet over high heat.
- Add the shrimp to the skillet and sear for about 1 minute per side until pink and opaque, then set aside.
- Reduce the heat to medium-low and melt 1 Tbsp of butter in the pan.
- Add garlic and shallots to the pan and cook for 3 minutes, stirring occasionally.
- Add wine, lemon juice, salt, pepper, and red pepper flakes to the skillet and bring to a boil.
- Let the mixture reduce for 4 to 5 minutes, stirring occasionally.
- Once the liquid has reduced by about half, turn off the heat and add parsley and lemon zest.
- Add the cooked pasta/noodles and shrimp to the pan, drizzle with olive oil, and gently toss.
- Serve immediately.
