15 Minute Shrimp Scampi

Ingredients

  • 1 tablespoon olive oil
  • 1 lb. raw shrimp, shells and tails removed
  • 4 large cloves garlic, minced
  • 1 tablespoon butter
  • 2 tablespoons white wine
  • ¼ cup minced lemon pieces
  • 8 ounces uncooked capellini noodles
  • a handful fresh chopped parsley
  • to taste salt and pepper
  • for topping Parmesan cheese

Instructions

  1. Heat olive oil in a skillet and cook shrimp for 1-2 minutes on each side, seasoning with salt and pepper.
  2. In boiling water, cook the capellini noodles according to package instructions.
  3. In the same skillet, sauté garlic and butter until fragrant, then add white wine and simmer.
  4. Stir in lemon pieces and return shrimp to the skillet to warm through.
  5. Combine drained noodles with the shrimp mixture and fresh parsley, season, and top with Parmesan cheese.
